Artichoke
A low carb, low fat vegetable belonging to the thistle family, the artichoke was well know to the ancient Greeks and Romans for its nutritional and healing qualities.
Artichoke has two compounds, cynarin, and sesquiterpene-lactones, that inhibit cholesterol synthesis and increase the excretion of cholesterol in the bile, thus reducing levels of cholesterol in the blood.
As well artichokes are an excellent source of:
- B group vitamins
- dietary fibre
- folate
- vitamin C
- vitamin K
- the antioxidant compounds silymarin, caffeic acid, and ferulic acid
- the minerals copper, calcium, potassium, iron, manganese and phosphorus
and a good source of:
- the antioxidant flavonoid compounds carotene-beta, lutein, and zeaxanthin
